Dr inż. Hubert Antolak, a young scientist from Lodz University of Technology, received a scientific award from the Division IV of Technical Sciences of the Polish Academy of Sciences for his doctoral dissertation "Asaia spp. bacteria as a new contaminant of functional beverages" and 8 articles thematically related to this dissertation.

Dr inż. Hubert Antolak has been recognised for his research results concerning the isolation of Asaia spp. bacteria contaminating flavoured mineral waters and isotonic drinks. This work was carried out within the project financed by the National Science Center obtained in the competition Prelude.

– I was interested in the ability of Asaia bacteria to form biofilms and synthesize carotenoids and volatile compounds, which are responsible for deterioration of sensory qualities of products contaminated with these bacteria - explains the laureate. - It should be added here that Asaia spp. strains are relatively insensitive to disinfectants used in soft drinks industry, therefore new formulae and technologies are being searched for. An important aspect of my research was to apply natural strategies against these bacteria using plant extracts and fruit juices, which are rich in bioactive compounds with antimicrobial and anti-adhesive properties.

Dr inż. Hubert Antolak is an assistant professor at the Institute of Fermentation Technology and Microbiology in the Faculty of Biotechnology and Food Sciences. The Institute is one of the few research units in the world dealing with Asaia spp.
