Scientific achievements
Dr Eng. Gabriela Kowalska from the Faculty of Biotechnology and Food Sciences at Lodz University of Technology is a specialist in food technology and nutrition, food chemistry, and the design of bioactive food ingredients. Her scientific output includes 9 publications listed in the JCR. She is a co-author of patents and patent applications concerning, among others, microencapsulated bee product preparations, oak seed powder, black garlic, and flaxseed-derived biopolymers.
Research profile and research directions
Her scientific interests focus on the development of innovative systems for the stabilization and delivery of bioactive food ingredients using natural plant-derived biopolymers. A key area of her research includes flaxseed-derived polysaccharides, microencapsulation of bee products, liposomal carrier systems, and the recovery of bioactive peptides from food industry by-products. Dr Kowalska conducts research aimed at increasing the stability, bioavailability, and biological activity of bioactive compounds, as well as exploring their application potential in functional foods and clean-label technologies.
Among her most significant achievements is the development of original microencapsulation systems for honey and royal jelly using natural biopolymers, including flaxseed polysaccharides, as innovative carrier materials. The developed solutions have been protected by patents and a patent application concerning the production of flaxseed-derived biopolymers. These technologies have strong application potential in the design of functional foods, supplements, and ingredients with enhanced biostability and bioavailability.
Honours and recognition from the scientific community
Dr Kowalska actively cooperates with the food industry, carrying out research and development projects and services for companies including MAJAMI Sp. z o.o., Maspex, Millano Sp. z o.o., and Łysoń Sp. z o.o. Her work includes the development of functional products, optimization of technological processes, and assessment of the bioactive properties of raw materials and products. The results have been used in implementation-oriented projects, including those related to the “FIT pianka” product, and support the development of clean-label technologies and circular economy solutions in the food sector.
In her international activity, she completed a one-year DAAD scholarship at the Technical University of Berlin, where she conducted research using electron paramagnetic resonance spectroscopy. She has also completed research internships and participated in Research Week programmes in Berlin, Prague, and Vienna. She is a participant in the international project “From Waste to Opportunity: Sustainable Approaches to Food Waste” under the ECIU Seed Programme and, since February 2026, has served as an ambassador of Chemical Abstracts Service Poland.
